Arizona Sunshine Pie
This is a senationally citrus pie and is so easy to make. You just throw five ingredients together in your blender and pour it into a unbaked pie shell.Bake 40 minutes and you have the zestiest sweet-yet-tart lemon pie you ever tasted. It tastes like you worked for hours on it. You don't even squeeze the juice from the lemon. Just throw the whole thing into the blender, peel and all. This recipe came from a Nebraska newspaper.
Arizona Sunshine Lemon Pie
Ingredients
1 large lemon
4 large eggs
1 stick of melted butter
1 tsp.pure vanilla
1 1/2 cups of sugar
1 unbaked pie crust
Directions Preheat oven to 350 degrees.
Cut lemon into small chunks leaving the rind on,
remove seeds.In a blender or food processer,
blend together lemon chunks, eggs, melted butter,
vanilla and sugar until mixture is smooth and creamy.
{it should be fairly runny} Pour into unbaked piecrust.
Bake at 350 for about 40 minutes.If the crust becomes too
brown cover gently with foil and finish baking. Serve
with a dollop of fresh whipped cream or make a Merigue for the top.
For Merique
Use 2 egg whites beat until stiff peaks form gradually add 2 Tbsp sugar while beating, cover the top of the pie spreading, this to the edges. Put under the oven broiler until lightly browned. Takes a minute or two only. Watch carefully so it doesn't burn the top. Cool and enjoy.
Crust Recipe Easy no roll
Makes 1 crust.
Ingredients:
1 1/2 cups of flour
1 tsp salt
2 tsp sugar
1/2 cup vegetable oil
2 Tbsp milk
Directions:
In a pie pan, mix together flour,salt and sugar. Make a well in the flour and
add the oil and milk.Mix well with a fork until it forms a ball. With your
hands pat this into your pie pan and up on the sides,forming a crust.
I had lost the recipe for this. Glad to find it again. Made the pie for the first time two weeks. The lemon I used for the first pie had more rind than lemon and wasn't as good as the second pie that did not have so much rind. I would suggest that if the lemon you are using seems to have too much rind, don't use it all. This pie is very good. My daughter enjoyed making it with me.
