Our Tucson Trip







We enjoyed visiting, Old Tucson Studios with my brother Ron and Betty. We stayed at a wonderful Time Share in Oracle, Az. for three days. Enjoyed cooling off in the hot tub every night.We saw the Can Can girls dancing, the Gunfight shows.the Medicine man show.We dressed up like the Old Wild West guys and gals,very fun, and had our photos taken.We rode on the little train site seeing around the Studios.In Old Tucson,Arizona

Happy Birthdays in April



Kristyn and Brooklyn had their birthdays today. We celebrated them during our Easter feast.The feast was ham, party potatoes, peas,corn, tossed salad,and hot rolls. Pink lemonade for drinks and of course birthday cake and ice cream.

Lots of Bunny ears donated by the Brooks Family. They loved them.They are ready to fill their Easter Baskets with lots of easter eggs.

We had fun filling the Easter Eggs with money. Here are photos of the Grand kids searching for Easter Eggs in Brandon and Mindy Wendelschafers backyard. What fun and excitement they had finding eggs. It was a beautiful sunny day about 75 degrees.Perfect for the Easter Egg hunt.

Ethnic Cooking Class



This month I was the hostess for the Ethnic Cooking Class . Guess what, we had Canadian food. Canada was under the Monarchy of England for many years. We lived in Western Canada, therefore we used a lot of their traditional recipes. If you lived in Eastern Canada, you prepared French Meals. We enjoyed Delicious roast beef with Yorkshire pudding and gravy. Gomen Wat, this is Swiss Chard all jazzed up, spicy with lots of garlic and onions. Mashed turnips, they were so sweet. English Fresh Raspberry Trifle for dessert. Notice my centerpiece it was a little Royal Canadian Mounted Police girl with the Canadian Flag. The drinks of choice were cans of the fabulous Canadian Ginger ale.
The recipe for Gomen Wat follows: 1 pound Swiss Chard greens, washed, trimmed,and chopped coarsely, 2 cups water, 1 tbsp. olive oil,3/4 cup chopped onions,1 tbsp. olive oil, 1 tbsp. fresh lemon juice,1 tsp. salt,1 1/2 cups sliced green bell pepper, 1/2 tsp. turmeric,1/2 tsp allspice,1/2 tsp. paprika. 2 tbsp. minced fresh ginger root. Directions: Place chopped greens in pot with 2 cups of water.Bring to a boil, then reduce heat to low. Cover and simmer about 20 minutes. Drain, but reserve the cooking water, Set aside. Heat 1 tbsp. olive oil in a pot. Stir in onions and cook until just beginning to brown, about 10 minutes. Stir in garlic and cook for 1 minute. Add the cooked greens, 1 tbsp.olive oil and reserved cooking water. Simmer, uncovered, over med. heat until liquid is gone. Add the green pepper slices, lemon juice, salt, turmeric, paprika, allspice, and ginger root.Cook until peppers are soft.
